docs(document): restore enable_watermark for POST /v2/document#404

Re-publishes the enable_watermark parameter, Watermark example, and the July 14 changelog entry (reverted in #401). The API-side issue that prompted the rollback is resolved, so document watermarking is documented again. Co-Authored-By: Claude Opus 4.8 (1M context) <noreply@anthropic.com>
